![]() We don’t mean to make dry biscuits though! I promise! And usually they are not. Getting our processing more consistent has also been a big part of what we have been working honestly ever since we opened. When they are made just right and also baked just right, they are super moist on the inside with just a light crunch on the outside. The first location is just super small relative to the volume we do and now that the inside is all a kitchen, the space is for sure limited. Our hope is that on our third location we can build it out with more seating in general. Whenever you can make it back, I’ll try our new process and see if it does a better job. Then when we fry it, that moisture tends to release back into the dredge which sometimes does cause it to separate a bit. One thing that gives us a little issue is that we brine our chicken for a good amount of time and it adds moisture to the meat. We recently made a few tweaks to get it to stick more consistently well. The breading on the chicken is something we have been working on for a bit. I work in customer service as well and you're doing a great job. I'm not going to pretend like I know anything about your margins, but I just did not see the value. I feel like there's plenty of quality places in town where you can get a good sandwich and at least a drink for the same price. ![]() These two things combined made it a huge mess a few bites in. The biscuit was also a bit on the dry side as well. I didn't like how the breading on my chicken was not sticking to the meat at all. I like some of the interesting combinations you guys came up with, that's what drew me in the most. I liked the location and the decor, it made me consider sticking around and having lunch there, but seating was limited. I am not a food critic, just a schmuck with a Reddit account, but here's what I thought based on last time. Will have to be later since it's kind of out of the way for me.
